The Southbend HDG-24 griddle uses natural gas and an electronic spark ignition to heat the U-shaped burners under the griddle plate. Each burner is spaced 12 inches apart, ensuring heat is evenly distributed. Because the sides are double insulated, heat is retained, and the unit is constructed of aluminized and stainless steel to resist corrosion and dents. Side and rear splashes contain messes, and liquid and food debris is sent to the grease drawer, which is removable to facilitate cleanup.

This unit has instant-on thermostatic controls that are adjustable with a knob, and the temperature settings on the knob are shown in numbers, ranging from 200 to 400 degrees Fahrenheit. To prevent overheating, the Southbend HDG-24 griddle has 4-inch-tall, adjustable legs that add stability on uneven surfaces. This griddle should be used under a vent hood, and it requires 12-inch clearances on the sides and an 8-inch clearance on the rear.
