It generates steam when water in the jacket surrounding the interior heats up, and because the water is factory charged, the unit is self-contained and does not require a water supply. The steam jacket extends up two-thirds of the kettle, which means that it heats less evenly than full-jacketed units but is a more economical choice. Made of 316 stainless steel, the interior liner is highly resistant to corrosion, so it is ideal for marinara sauce, barbeque sauce, and other acidic products. A faucet bracket that can accept a pantry faucet is included—a single unit for hot or cold water or a double unit for both hot and cold water.

This Groen AH/1E-60 steam kettle has a front-mounted control system enclosed in a stainless steel housing to prevent damage from splashing and dripping. Lights on the control system notify the operator if the power is on, the unit is heating, or water is too low for operation. The regulating thermostat has a temperature range of 150 to 270 degrees Fahrenheit, and when the temperature reaches the set level, the unit shuts off until the temperature drops. This kettle has a gas pressure regulator, which protects the unit in case pressure in the gas supply line gets too high. If the pressure is above 27 PSI, a limit switch turns off the jacket, and above 30 PSI, a safety valve releases the jacket's steam.
