This unit's pan is made of stainless steel with a polished interior surface and coved corners for easy cleanout. The flat firebar elements are mounted to the outside of the steel bottom plate for even heat distribution and a hinged stainless steel cover is included to help contain heat and steam. The lid can even stop in place for vented cooking and has a cool-touch handle for safe use.

Tilting this braising pan is safe and easy since it has an anti-jam pan lifting mechanism with a crank handle. The hand crank tilting mechanism lets you slowly tilt this braising pan and maintain complete control while emptying the skillet's contents. It tilts completely with approximately 30 revolutions and the pouring spout with a removable strainer directs food into your hotel pans or food storage containers placed on the included receiving pan supports.
